Easy Weeknight Meals: 10 min Taco Salad

85g arugula

3oz frozen shrimp thawed

1/2 cup black beans

Taco seasoning to taste

Bolthouse or Whole Foods brand avocado dressing

Sour cream and shredded cheddar optional

Thaw shrimp in small sauce pan and drain. Return shrimp to pan and add black beans and taco seasoning. Stir. Place arugula on a dinner plate, top with dressing. Pour shrimp and black bean mixture over top. Serve with shredded cheddar and sour cream if preferred.
